Chicken Italiano


I grew up in a largely Italian neighborhood.
A lot of the neighbors had their kitchens in the basements.
as this was in the days before air conditioning. 
 This recipe  reminds me of a dish a friend's mother would make,
only the mother was using  little squabs.
For this recipe you will need a large skillet for the chicken  dish
and a small sauce pan to cook the macaroni. 
2  boneless and skinless chicken  breasts
Rolled lightly in flour
 Put small  amount of oil in skillet and get the pan  hot.
Fry the chicken for about 10 min
Turning as to brown both sides.
You won't have any extra oil to drain
Pour in on can of diced tomatoes and herbs.
I use Italian seasoning, Oregano and Garlic
Also add 2 tablespoons of
Parmesan cheese in to the tomatoes.

Piggly Wiggly/s "Always Save brand", has half the carbs.
of Del Monte Diced Tomatoes with Basil, Garlic and Oregano
You can add the herbs yourself.
Del Monte  has more than twice the sugar added
in the form of High Fructose Corn Syrup as well.

Cover and cook over medium  for 15 minuets
 to make sure Chicken is well cooked.
During this time you can boil a  1/2  cup of  dried twisted macaroni.
Cook until tender.
I like the ones that are white,  orange and spinach colored.
Drain and  add to the chicken and tomatoes
at the end of 15 min. cooking time.
Stir together well then turn off heat.
Then add 2 more tablespoons of Grated Parmesan Cheese
and a  1/2 cup of shredded Mozzarella,
let stand 5 min. while cheese melts.

Served with small green salad or  low  carb. vegetable.
Serves 2 so if you want to feed 4 , just double the recipe.
Chicken breasts have about 20 grams of Protein each  and no carbs
Can of diced tomatoes adds about 20 carbs
Cheese has little or no Carbs.
Small amount of macaroni divided by two servings should not be a problem.
