Cooked Chicken Dishes

I have a couple of dishes I would like to share with you tonight.
My favorite way to fix skinless chicken breasts is to wash them,
wrap in  aluminum foil and bake for 30-40 min in a 375 oven.
I salt and pepper them and add various seasoning such as garlic
or rosemary lightly.
Best to make sure  the chicken is  thawed out..
This makes the chicken moist and tender.
 Once baked I have two different way to use them.
One is a dish made with Turmeric  as the seasoning.
You will need 2 baked  and  still warm chicken breasts, cut in long strips.

I spray a large frying pan with cooking spray.
Add a tablespoon of Olive oil.
Add  cooked chicken strips and level tablespoon of Tumeric.
Stir chicken around the pan until  chicken  is a golden color.
Then add 2-3 cups of package slaw , stir and then add  1/2 cup water ,
 cover and cook for about 15 min. until cabbage mix is softened..
I get the kind of packaged slaw that also has carrots added
 which give the dish eye appeal and is  more nutritious.
 I  also make this dish with boneless pork chops but use different seasoning
.Either way it can be served over Chinese noodles for extra crunch.
I eat mine straight to save on carbs.

The second dish is made with cooked chicken breast strips,
About 1/2 each of  red, orange, yellow and green bell peppers,
1/2 large sliced  onion and  sliced Provolone cheese.
First wash  the breast ,
then   sprinkled  the chicken  with salt, pepper, garlic powder and rosemary.
 Wrap in foil.  Bake for 30-40 min depending on size.
 Half way through their baking time,
Spray the pan with cooking spray, and add small amount of oil.
I start stir frying the pepper strips with the the sliced onions.
I use salt and pepper and add a sprinkle of Butter Buds.
 Cook for about 15 min, stir often
 When chicken is done unwrap the breasts.
Be careful as package will be hot.
 I put a chicken breast on a plate and cover with pepper mix.
Top with 2 slices of Provolone cheese
and put in micro-wave for 1 min to melt the cheese.
Low in Carbs , delicious and simple to put together.
