Quick Skillet Dinner

You will need for this recipe:
 

1/2 pound good hamburger
1 large onion chopped
4 medium potatoes, washed, pealed and cut to small cubes.
1 cup shredded cheese of your choice.
4 fresh eggs beaten.
salt and pepper to taste.
Jar of Salsa.

Large skillet to cook in.

This is a quick throw together skillet meal that can be used for breakfast, lunch or supper.
I start with a 1/2 pound of good hamburger. Meat is very high in fat so I try to get
the leanest I can. It is better to use 1/2 pound of good meat than a pound of the fatter ones.
Fry hamburger until browned. Add cubed potatoes and cook for 10 min. covered with lid. then add onions and cook until onions are softened.  Clear center of pan, pour your  eggs in middle
I usually use a little cooking spray first  to keep eggs from sticking.  I let eggs set up and then
proceed to scramble them into big chunks.  When eggs look done sprinkle the cup of
cheese over contents. Turn fire off and cover for about 5 min. until cheese is melted.
Serve with Mild Salsa.
