Sweet Potato Streusel
3 cups sweet potatoes (cooked & mashed)
¾ cup coconut
½ cup oleo (melted)
2 eggs
¾ cup sugar
½ cup milk
½ tsp. Vanilla extract
Topping
½ cup brown sugar
½ cup chopped pecans
3 tablespoons Flour
¼ cup oleo (melted)
dash cinnamon
Mix coconut, potatoes, oleo, eggs and sugar with vanilla
& milk.
Spoon into greased 1 ½ quart casserole dish.
Topping
Mix brown sugar, pecans, flour & oleo and sprinkle over
casserole
mixture. Sprinkle with cinnamon. Bake uncovered @ 350° for 35
minutes.
Add pecans on top. (Optional)
