Homemade Soup

ecipe from the kitchen of Joan High

                                              What you  will need.
1 large  soup pot.
1 pound of lean ground meat  (Beef, Lamb, Deer)
2 to 3 pounds of  white potatoes
1 pound bag of carrots
1 stalk of fresh celery
1 medium size onion
1 bunch green onions
2 cups of sliced  fresh mushrooms
2 packages of Stew Mix seasoning or 1 pk, stew mix and l pk. onion soup.
Salt and Pepper to taste plus 1 teaspoon of garlic powder  if you like garlic.
8 cups of water (or tomato or V8  juice can be used for a change)

Preparations

Fry ground meat until browned. Drain grease and put in pot.
Wash peel and quarter potatoes, set aside in a container of cold water.
Wash scrape and cut off ends of carrots. Chop in about 1 inch pieces
Wash celery after pulling it apart as there is often sand inside.
Chop enough small pieces to fill a 2 cup measure. Also finely chop the green leaves
Cut and put unused piece in a plastic bag and refrigerate for later use.
Peel and chop fine a medium onion (about 1 half cup)
Wash and peel a bunch of  green onions. Cut off any bad piece on the greens.
Cut in small pieces including the tops.
Wash mushroom and cut off bottom of stems. Slice in thin strips.
Put everything into the soup pot  but the potatoes. You will add them later.
Add about 8 cups of water or enough to cover everything in pot.
Add 2 packages of  Stew Mix seasoning or
1 Stew Mix seasoning and 1 Lipton Onion Soup Mix pack.
Bring to a boil then turn down, cover the pot and cook on low heat for 1 hour.
Add the quartered  potatoes.
(Rule for amount of potatoes is one for everybody that is eating and one for the pot)
Cook for 1 hour on medium heat.
Potatoes and carrots should be soft when pierced with a fork.
Put on simmer until ready to eat.
You can divide some of this up and freeze for another meal. 
However this will keep about 3 days in the refrigerator 
and  be heated up in small batches in the micro wave.
